You can set hotel, car and cruise bookings to Open, the same way you do with flights.
An Open booking is one you are holding but have not confirmed. It counts in your accounting, so profit and loss and every financial total include it and you can see the work sitting there. It stays off anything the customer sees.

The status works the same on trips and on proposals, and across all booking types. It helps anyone holding space while a client decides, since the numbers stay in your books and the client only sees what is committed.
